On Thursday, Villa Pétrusse confirmed Kim de Dood's departure and announced that Milan Brée, the current head chef at La Cristallerie, would be taking over in January.

De Dood has helped build up the acclaimed restaurant since its opening in June 2025. Le Lys was awarded its first Michelin star just a few months after launch.
De Dood himself was named Gault&Millau's "discovery of the year" for 2026, before winning their young chef accolade earlier this week.
Milan Brée, who will assume the title of head chef at Le Lys in January 2027, trained in Nantes and has worked at a number of renowned culinary establishments, including Domaine Les Crayères in Reims and La Villa de Camille et Julien in the Grand Duchy.
He was a sous-chef for three years before taking over as head chef at La Cristallerie in Hotel Place d'Armes in February 2025.
La Cristallerie, meanwhile, is due to close for renovations shortly to optimise the kitchen, with a new restaurant planned to take its place in the long-term.
