Caro triesBröd – Ivy-league buns and simplicity done right

I like minimalism in breakfast places. But minimalism can easily turn cold. If it’s too clean, too aesthetic, too concept-heavy, it loses warmth. Bröd doesn’t.

I went on a Sunday at 9am and there were already people waiting to get in, but that’s always a good sign. And while I was there, the place never really emptied, with people constantly popping in and out to grab coffee and, most importantly, their cinnamon and cardamom buns (we’ll get to those in a bit).

This new place is located in Limpertsberg, which already gives it that city-neighbourhood feel. At some point during the morning, the sun starts shining into the café and lights up the whole space. Fresh flowers on the tables. Light wood. Easy and clean does it. It’s minimalist, yes, but still cozy. And that balance isn’t always easy to pull off.

Bröd belongs to Swedish-Luxembourgish sisters Astrid and Linnéa Bohlin. Their concept is Fika – the Swedish idea of slowing down over good coffee and something homemade. It’s not just a coffee break, it’s more intentional than that. It’s about pausing and rewinding a little.

Both come from hospitality and business backgrounds and at some point decided to stop just talking about opening something and actually doing it. When I asked about the concept, they said: “authenticity and simplicity”. No shortcuts. No overcomplicating things. Just real, homemade food. “Eat good, feel good.”

They want people to feel comfortable enough to slow down. And you can sense that community matters to them just as much as what’s on the plate.

The food and drinks

The menu is entirely curated by them. They develop the recipes themselves and bake and cook everything in-house daily. There’s a strong focus on sourdough fermentation and seasonal ingredients. They try to source locally as much as possible, while importing key Scandinavian products to keep things authentic. The menu rotates throughout the year because they like to cook and bake “based on season and mood”.

I decided to keep it classic and ordered the Scandinavian Breakfast (€10.50): homemade sourdough bread, whipped butter, cheese, boiled egg, homemade jam.

Now, with something this simple, quality has to carry the whole thing. And it did.

The sourdough was perfect. The proper crust, good chew, and real flavour. The cheese had enough character to stand on its own, while the jam brought the right amount of acidity and sweetness, pairing beautifully with the egg-cheese combo. It’s simple in theory, but when done well, it doesn’t need anything else.

Other options include a yogurt bowl (€10.50) with Greek yogurt, seasonal compote and homemade granola, or avocado toast (€12.50) on their sourdough with cream cheese, avocado, hemp seeds and jalapeño salsa.

Drinks are your classics: matcha (€6), chai latte (€6), cappuccino (€5), with alternative milk options. I also liked that they have a fridge with complimentary cold water you can just grab yourself. A small detail, but an appreciated one.

And then… the buns. The cinnamon bun and cardamom bun (€5 each).

Some might find €5 a bit much for a bun. But mine came out still warm, fluffy, and soft in the middle. It genuinely graduates with an A+ from Ivy-Bun-league. If you want to make someone’s day better, you bring them one of those buns.

I’ve had my fair share of cinnamon buns – I’ve tried baking them myself once – so trust me when I say that Bröd absolutely crushes the bun game.

Final thoughts

Bröd isn’t loud about what it is and focuses on doing simple things properly. It’s the kind of place where you can enjoy getting your coffee, without feeling rushed out the door. And in a city where everything moves fast, in Fika we trust.
