
The signal crayfish, for instance, has only been around the Grand Duchy for about 50 years. The population of omnivores is now being monitored since they are known to be highly resistant. They mostly feed on dragonflies and stream mussels, which are protected species.
The environment administration is therefore actively catching the invasive animals. According to records, close to 28,000 crayfish were caught with the help of cages over the past four years. The water management office has also helped in this process and caught 400 specimen.
The crayfish can be found in the Sûre, the Our, the Wollefsbach basin, as well as the Remich pond. Authorities do not intend to drive them to extinction, but rather manage their population size.
Thus far, only one restaurateur in Luxembourg has signed a convention to be allowed to prepare and serve crayfish.
